
Zucchini Muffins
3 c. grated zucchini
2/3 c. melted butter
1 1/3 c. sugar
2 eggs, beaten
2 tsp. vanilla
2 tsp. baking soda
Pinch of salt
3 c. flour
2 tsp. cinnamon
½ tsp. nutmeg

- Preheat oven 350 degrees
- In a large bowl, combine sugar, eggs, and vanilla. Stir in zucchini and then the butter.
- In a separate bowl, combine flour, baking soda, nutmeg, and cinnamon. Add these ingredients to the ingredients above.
- Place batter into mini muffins cups and cook for 15-20 minutes. For regular size muffins, cook for 25-30 minutes.
